Just like olive oil and wine, honey is an artisanal food that is traditionally harvested in late Summer. Once used as an anti-bacterial healing agent in ancient Egypt, pure honey is made from the nectar of flowers and is the only food that never needs refrigeration and never spoils. Every bottle of artisanal honey has it’s own complex composition and distinctive personality determined by the type of nectar gathered by the honeybee. In fact, the color, aroma, texture, taste and flavor profile of any honey is determined by it’s terroir, the unique combinations of the local floral source, the season and the region where it is produced, ultimately highlighting it’s quality and character.

Marina Marchese unexpectedly visited a neighbor's apiary during her former career as an international designer, where her first taste of fresh honey from the beehive would change the course of her life. She quit her job, built a beehive and acquired some Italian honeybees to become a beekeeper. It was on a visit to Montalcino, the City of Honey, that Marina became passionate about single-origin honeys. Compelled by the philosophy of terroir and the diverse flavor profiles of honey determined by the type of nectar gathered by the honeybees, Marina launched a revolutionary collection of artisanal honeys under the Red Bee Brand. Today, Red Bee ® Honey sells her luxury honey to celebrity chefs, restaurants, cheese and artisan food shops all over the country. Marina is the founder of The American Honey Tasting Society, to protect the quality and character of this noble food and educate through her signature Honey Tasting Laboratory Workshops. She is the author of Honeybee: Lessons from an Accidental Beekeeper. Visit www.redbee.com for more information.
