The holidays are just around the corner, and hosting duties beckon! Tonight, let Red Apron Chef/Owner Jo-Ann Laverty and Sous Chef Maria Henao show you how to take a simple menu and serve it up two ways. Using only local and seasonal ingredients, Jo-Ann & Maria have created a multi-course holiday menu that can be elegantly and formally plated, or served in a more rustic, family-style manner.

We’ll make: saute of winter greens with roasted garlic, root vegetable chips and apple cider vinaigrette (Barkley’s Apple Orchard); caramelized onion and apple galette with chevre (Hall’s Apple Market, Clarmell Farms and Castor River Farm); stuffed turkey breast with barley, sweet potato and cranberry pilaf, and rosemary microbrew gravy (The Pickle Patch, Castor River Farm and Upper Canada Cranberries); smashed potatoes and pumpkin with roasted garlic and sage; shredded Brussels sprouts with bacon and maple; corn flour fry bread; and spiced winter squash panna cotta with salted honey and sunflower brittle.
