There’s been a lot of talk about superfoods in recent years. Rich in essential fatty acids, antioxidants and fibre, superfoods can help regulate blood sugar, promote digestion, protect against disesase and, some say, slow down the aging process. Tonight, Chef Anna gives a primer on some of these gems and walks us through a menu that will inspire us to start incorporating superfoods into our every day: auinoa tabbouleh and flatbreads; kale salad with seared trout and toasted almonds; maple smoked-mackerel with roasted cherry tomatoes, spicy eggplant puree and Mediterranean salsa; avocado and dark chocolate mousse; and vegan toasted coconut ice cream with macerated blueberries.
