ADVANCED HACCP: Verification and Validation


PURPOSE: Define the 6th HACCP Principle, Verification, which also requires knowledge and understanding of the concept of validation. All programs within the Food Safety Management System should be both validated and verified by competent individuals with a firm understanding of these two concepts.  This course defines and explains in depth verification, the act of reviewing programs and systems to determine if what has been planned and documented to maintain safe food, is in fact, operating as expected.  Validation, determining if the methods identified to produce safe food are scientifically sound and effective, is also explored.

SCOPE:  While this course reviews the five preliminary steps to developing a HACCP Plan and the seven principles, the focus of the course emphasizes discussion and exercises focusing on Verification and Validation of prerequisite programs and the HACCP system. 



Regulatory agencies, global food safety schemes and customers require verification and validation of your HACCP system. This one-day course explores the following related to HACCP and Food Safety Management Systems verification and validation: 

• Differences between verification and validation activities
• Methods for verifying the efficacy of Prerequisite Programs
• Components of Critical Control Point verification
• HACCP System verification procedures
• Instruction in HACCP Plan Validation
• U.S. Regulatory requirements for verification and validation  

This course is designed to meet the required criteria of the International HACCP Alliance
Advanced HACCP: Verification and Validation of HACCP Systems concentrates on the various verification activities addressed in the sixth principle of HACCP including:

- Verification of prerequisite programs, the foundation for an effective HACCP system 

- Routine verification of CCP monitoring, corrective actions, and other related activities

- Periodic audits of the entire HACCP system to verify compliance with the written HACCP plan

- Initial validation and periodic revalidation (reassessment) of the hazard analysis, critical limits and other essential    components of the HACCP plan to ensure that the designated control measures adequately address specific hazards.

- nteractive team exercises designed to facilitate the understanding of verification and validation are included. 

PREREQUISITE:  Completion of HACCP Manager Course or equivalent experience with the HACCP system.  Recommend Prerequisite Programs for Food Safety Systems. 



Participants must have government issued identification (state issued Driver’s License, federal identification card, etc.) verified by instructor prior to sitting for the examination.  Continuing education units are not awarded for this course.  Upon verification of successful completion of learning assessment(s), including a passing score on the exam, participant will be awarded a Certificate of Accomplishment in Advanced HACCP: Verification and Validation.
