He has settled into his new position and is ready to showcase his talents in the smaller ~ more intimate cooking school setting. Chef Vargas honed the craft (and love) of pasta making throughout his career but most notably as he served under famed Chef Scott Conant's Scarpetta restaurant in NYC. After helping to launch the flagship restaurant he continued working at Chef Conant's other restaurants in Miami, and Los Angeles, where he became the Executive Chef at the famed Scarpetta in the Montage in Beverly Hills. He is a teacher at heart and would like to share the art of pasta making – in all different forms - with his new neighbors!
Chef Vargas will demonstrate his signature gnudi, rigatoni, gnocchi and agnoletti. If you are in the cooking school you know you are going to eat – every pasta will be paired with the perfect sauce and of course we will send you home with recipes so you can practice on family and friends!
